
Guacamole is one of those rich, moreish and creamy dips that can satisfy late night cravings. I’ve tried a number of different recipes over the years and this is one I’ve concocted. It includes all elements I love; avocados, coriander, lime, red onion, jalapeño and tomato.
Consume within 3 days.
2 ripe avocados (not overripe). I used Hass
1 roma tomato finely chopped
1/2 red onion finely chopped
1 jalapeño chilli chopped and deseeded
Handful of coriander leaves, chopped finely
1 lime
salt and pepper.
Peel the avocado and remove pip. Mash the avocado into a bowl with a fork. Add the juice of one lime and mix. Avocado tends to turn a brown colour after a while. The lime juice will slow this down and add a good tang to the guacamole. Add all the other chopped ingredients and combine. Add salt and pepper to taste. Serve with Corn Chips
All the above ingredients can be varied to taste. If you like your guacamole hot, don’t discard the seeds in the jalapeño.
