Recipe Scene: Coffee Scrolls

I think most people love a coffee scroll. I know I have strong childhood memories of getting one as a special treat from the school canteen – they always seemed huge back then. In this tradition I like to continue to to make my scrolls pretty generous, but you can make them smaller if you like. However that probably just means that people will have two.

Recipe Scene: Vanilla Pear Cake

This is a really quick and easy cake to make, and is a great way to use up pears. I often end up with one or two pears that are too squishy to eat, but it seems a shame to throw them away. By stirring them through a vanilla cake batter, you get a delicious pear flavour to the cake, plus you can feel virtuous for not having thrown the pears in the compost.

Recipe Scene: Light Carrot Cake

There are eleventy billion carrot cake recipes, and I feel that I have tried out a significant proportion of them. The thing I love about this one is that it’s very simple, and really quick to throw together. Although I love cream cheese icing, this lemon glaze does, and the name implies, result in a lighter, less rich cake. Given the cake itself is quite simple I usually cook it in a fluted bundt tin to make it look a bit more fancy.

Recipe Scene: Macadamia Blood Orange Slice

This really nice slice is a sort of cakey brownie – it has a bit too much flour in it to be an actual, sqidgy brownie, but is just as easy to throw together. You can use any kind of nut that you like, but I think macadamias work really well. I like to adorn the top with drizzles of melted chocolate, but if you’re in a hurry it is just fine with a dusting of icing sugar.

Recipe Scene: Triple Chocolate Brownies

I reckon that pretty much everyone loves a brownie. There are of course absolutely tons of brownie recipes around that cater for all tastes – dense, sqidgy, firm, whatever you fancy. These ones are pretty dense and liberally studded with choc bits. They are delicious, and it is seriously difficult to stop at one piece.

Recipe Scene: Ricotta, Pear and Macadamia cheesecake

When we moved house recently my kids bought me a cookbook as a housewarming gift. It was Low and Slow by Louise Frane. I’ve cooked several things from it and they have all been sensational, but this dessert got the most raves. Like all cheesecakes it’s best made the day before and left in the fridge for the flavours to develop. I get it out of the fridge at least an hour before serving, as I think it works best at room temperature.

Recipe Scene: Apricot Rough Slice

I love using dried fruit in slices, and apricots are one of my favourites. This slice is really great, and has converted several people who believed that they hated dried apricots. I’ve also made a cherry ripe version using glace cherries, but this is my favourite. It also freezes well – I often make two slices, and freeze the second one, cut into bars, so I can grab a couple of pieces out as required.

Recipe Scene: Pretzel Tim Tam Rocky Road

The only rule about rocky road is that there are no rules. Well, maybe one – that lots of delicious things are held together by chocolate. Everyone has their favourite sort of rocky road, and this one contains all my favourite things – except nuts as I was sharing it with someone with a nut allergy.
