
This really nice slice is a sort of cakey brownie – it has a bit too much flour in it to be an actual, sqidgy brownie, but is just as easy to throw together. You can use any kind of nut that you like, but I think macadamias work really well. I like to adorn the top with drizzles of melted chocolate, but if you’re in a hurry it is just fine with a dusting of icing sugar.
Ingredients
100 grams butter
75 grams dark cooking chocolate
2 eggs
¾ cup (130 grams) sugar
1 tsp vanilla extract
Zest of 1 blood orange
½ cup (100 grams) chopped macadamias
½ cup (100 grams) plain flour
Melted chocolate for drizzling – optional
Method
- Heat he oven to 180 degrees C and line a slice tray with baking paper. Place the chopped butter and cooking chocolate in a microwave safe bowl and microwave on medium until the butter has melted. Stir until combined and smooth.
- Allow to cool slightly then add all other ingredients (except the melted chocolate for drizzling). Stir until just combined, being careful not to over mix.
- Pour into the slice tray and bake for about 15 minutes. Remove form the oven, allow to cool then drizzle with melted chocolate.
