Recipe Scene: Key Lime Pie

I remember eating this as a kid and loving it.  So when my lime tree went haywire recently and we were all a bit tired of lime curd I decided to make one.  However none of my recipe books had a recipe for it.  But I eventually found this recipe on and it’s a good one.  They used Granita or wholemeal biscuits for the crumb crust and added almond meal but I just used the good old Marie biscuits.



250 grams sweet biscuits

100 grams melted butter

4 eggs

395 gram tin condensed milk

2/3 cup / 160 mls cream

Finely grated rind and juice of 4 limes


  1. Preheat the oven to 170 degrees C. Line the base of a springform tin with baking paper and lightly grease the sides with cooking spray.
  2. Process the biscuits until they resemble fine crumbs, add the butter and mix until well combined. Press into the base of the tin and 3 cm up the side.
  3. Pour the remaining ingredients into a jug and whisk until well combined. Pour into the crust, place on a tray and bake for 40-45 minutes or until set.
  4. Allow to cool completely, decorate and serve.
