
I remember eating this as a kid and loving it. So when my lime tree went haywire recently and we were all a bit tired of lime curd I decided to make one. However none of my recipe books had a recipe for it. But I eventually found this recipe on www.taste.com.au and it’s a good one. They used Granita or wholemeal biscuits for the crumb crust and added almond meal but I just used the good old Marie biscuits.
Ingredients
250 grams sweet biscuits
100 grams melted butter
4 eggs
395 gram tin condensed milk
2/3 cup / 160 mls cream
Finely grated rind and juice of 4 limes
Method
- Preheat the oven to 170 degrees C. Line the base of a springform tin with baking paper and lightly grease the sides with cooking spray.
- Process the biscuits until they resemble fine crumbs, add the butter and mix until well combined. Press into the base of the tin and 3 cm up the side.
- Pour the remaining ingredients into a jug and whisk until well combined. Pour into the crust, place on a tray and bake for 40-45 minutes or until set.
- Allow to cool completely, decorate and serve.
