
I think probably pretty much every Australian kid had honey joys at their birthday parties. Even though my boys are well into their teenage years they still get pretty pleased when I make these. They are really quick and easy to make, and only have a handful of ingredients. Though no matter how many times I’ve made them I’ve not been able to work out how to stop them from sticking to the bottom of the patty pan.
Ingredients
2 tablespoons butter
2 tablespoons sugar
1 tablespoon honey
4 cups corn flakes
Method
1. Pre heat oven to 160 degrees c and line cupcake tins with 24 patty pans.
2. Place the butter, honey and sugar in a saucepan and heat until the sugar is
dissolved.
3. Measure the cornflakes into a large bowl and pour over the honey mix.
Stir really thoroughly, making sure that the honey mix is very well
distributed.
4. Fill the patty pans with the mix and bake in the oven for 15 minutes or so,
until slightly brown on the top. Allow to cool and then eat.
