Recipe Scene: Chocolate Apple Cake with Ganache

IMG_1064 This cake is fantastic. The apple makes it really moist and it lasts well. Also givne it has fruit in it it’s practically a health food. The cake doesn’t really need icing, but it makes a good dessert if you fill and top it with ganache and then decorate with chocolate curls, strawberries etc.

Cake ingredients

185 grams butter
1 ¼ cups (275 grams) white sugar
3 eggs
2 cups (300 grams) self raising flour
1/3 cup (35 grams) cocoa
¼ teaspoon bicarbonate of soda
1/3 cup (80 mls) water
2 medium apples, peeled, cored and finely chopped

Ganache ingredients

330 mls cream
375 grams dark cooking chocolate

1. Heat the oven to 180 degrees C. Grease and line a 20 cm round cake pan.
2. Cream the butter and sugar together then add the eggs one at a time. Don’t worry if the mixture splits.
3. Add all the remaining ingredients and mix until combined.
4. Pour into the prepared pan and bake for about 1 hour 10 minutes or until cooked. Leave in the tin for about 10 minutes then cool on a rack
5. To make the ganache plae the cream and chocolate in a microwave safe bowl and heat on medium for 1 ½ minutes, stir, and keep heating in 30 second bursts until the chocolate is melted. Place in the fridge until thick, and spread onto the cake.
