Recipe Scene: Choc Chip Banana Cake

This recipe is from Bill Granger’s cookbook Bill’s Food.  He calls it choc chip banana bread but to me it is most definitely a cake.  A delicious cake that smells divine while it’s cooking and tastes absolutory sensational.  I’ve cooked this so many times that the spine of the book is broken and opens to this page.  Sometimes it sinks a bit in the middle, but I think this is due to the high banana content.  You could always leave a banana out if you wanted it more risen and cakey.  I usually make this in two bar tins so I have a cake for us and one to give away.  However usually the kids insist we keep them both.

Ingredients

250 grams / 2 cups self raising flour

125 grams softened butter

250 grams / 1 cup sugar

3-4 ripe bananas, mashed

2 eggs

1 teaspoon vanilla extract

175 grams / 1 cup milk chocolate chips

Method

  1. Pre heat oven to 180 degrees C and grease and line cake tin/s.
  2. Mix the butter, sugar, banana, eggs, vanilla and choc chips in a large jug. Place the flour in a bowl, and pour the wet ingredients over it.  Mix until combined and pour in the the cake tin.
  3. Bake for about an hour, or until the cake is golden on top and cooked. Remove form the oven and allow to cook before turning onto a wire rack. Bill suggests you serve it with butter, but I really don’t think it needs it, it’s so delicious as it is.
