
Legendary Radio presenter and DJ, Max Crawdaddy chats to What’s My Scene about DJing and what goes into his famous free vegetarian chilli served up every Sunday afternoon at the Cherry Bar during Sunday Blues (Max’s Sunday Sessions). His Triple R radio show “Son of Crawdaddy” has been running since the mid 80’s and Sunday Blues started on September 4th 2011.
The Recipe
Ingredients:
Red, Green & Yellow capsicum
Bullhorn Chili
Jalapeno Chili
Canned smoked chipoltles
Liquid smoke
2 red onions
1 brownonion
1 white onion
Garlic
1 tin cannelini beans
1 tin butter beans
1 tin borlotti beans
2 tins red kidney beans
2 large tins diced tomato
Sweet potato
Dried oregano
Cumin
Smoked and hot paprika
Cinnamon
Ground black pepper
White pepper
Coriander
Sour cream
Crushed corn chips
Method:
– Roast sweet potato
– Combine ingredients, apart from Sweet potato, and cook in slow cooker
– Cook until vegetables are tender
– Once cooked add sweet potato and stir
– Serve with sour cream, chopped coriander leaves and crushed corn chips
