Recipe Scene: Tim Tam Slice

I tore this recipe out of a magazine, I think it was Better Homes and Gardens.  I couldn’t go past it, who doesn’t love anything Tim Tam related?  And the best thing about this – as well as it being completely delicious – is that it is SO QUICK.  It takes literally 7 minutes to make, and that includes getting the food processor out and putting it away.  You can make it with any flavour Tim Tam you like.  If I’m using flavoured ones I leave the cocoa out of the filling and add a few drops of food colouring instead – yellow for banana or pineapple, pink for strawberry etc.

 

Ingredients

2 packets Tim Tams

50 grams melted butter

2 ½ cups icing sugar

3 tablespoons milk

3 tablespoons vegetable oil

2 teaspoons cocoa or food colouring

150 grams cooking chocolate, melted

Extra lug of vegetable oil

 

Method

  1. Crush the Tim Tams finely in a food processor and mix through the melted butter. Line a slice tin and tip the mix in, pressing down firmly.
  2. To make the filling combine the icing sugar, milk, vegetable oil and cocoa or food colouring. Spread this paste over the base and smooth down well.
  3. Pop in the fridge while melting the chocolate. Stir a lug of oil through the chocolate – this helps make the chocolate a bit softer, and less likely to crack when you are slicing it.  Pour the chocolate over the filling and return to the fridge.  If you want very neat slices, you may want to score the chocolate before it is fully set, then slice through when it is completely set.
