Recipe Scene : Sugar free cocoa, date and coconut balls

When looking for a sweet treat without the sugar, try these cocoa balls. They’re sugar free, taste good and can be kept in the fridge for up to a month.  The recipe suggests raw cacao powder, but I have substituted  less expensive dutch cocoa powder with good results. Dutch cocoa tends to be less bitter than your standard cocoa powder, but feel free to try the standard cocoa if you have it on hand.

Ingredients

12 Medgool dates (or seasonal)

1 cup walnuts or almonds

1/2 cup shredded coconut and 1/3 cup extra for coating

1/3 cup Dutch cocoa powder (or raw cacao powder if desired)

1 tbs chia seeds

Method

De-seed dates and soak in boiling water for 10-15 minutes.

Drain and add all ingredients to a food processor until mixture is relatively smooth.

Form mixture into balls the size of walnuts, if not wet enough add more coconut oil, if too wet add coconut or more nuts to mixture.

Roll in extra shredded coconut and keep in the refrigerator for up to one month.

Makes approx 16 balls (adapted from recipe in taste.com.au by Rebecca Nittolo).
