Recipe Scene: Snickerdoodles

img_7329smI’d heard about these in American books and films but had no idea what they actually were.  I came across this recipe for them in Nigella’s How To Be A Domestic Goddess and decided to give them a go.  I’m so glad I did – they are delicious!

I make them often now, they are quick and easy and one of those things that you always have the ingredients for in the cupboard.   And as they cook they I don’t know if they freeze well, we always eat them.

250 grams self raising flour

img_7329sm½ teaspoon ground nutmeg

125 grams butter, room temperature

100 grams sugar

1 egg

1 teaspoon vanilla extract

1 tablespoon cinnamon

2 tablespoons sugar, extra

  1. img_7333smHeat the oven to 180 degrees C, and line two baking trays with baking paper.
  2. Cream the butter and sugar in a mixer until light and fluffy. Add the vanilla and egg and mix again.  Stir through the flour and nutmeg.
  3. Place the cinnamon and extra sugar in a bowl or on a small plate. Roll small spoonfuls of the mix into balls, then roll in the sugar and cinnamon mix.  Place on baking trays.
  4. Cook for 15 minutes, or until starting to turn golden and smell delicious.
  5. Remove and allow to cool.
