Coconut ice is a bit of a classic, and super quick and easy to make. In fact it’s so easy I’m slightly embarrassed about including a recipe for it. But whenever I make a tray people invariably ask for the recipe, so here it is. As a tip I’d advise you only use branded condensed milk, the store brand ones have the wrong consistency and it won’t set properly. I’ve seen coconut ice made with green food colouring but I’m a bit of a traditionalist – unless it’s for some kind of themed event it has to be pink.
Ingredients
3 2/3 cups icing sugar
3 cups desiccated coconut
Dash of vanilla essence
Pink food colouring
Method
- Line a slice tray with baking paper.
- Place the icing sugar and coconut in a large bowl and mix together. Add the vanilla and condensed milk and mix well – I find it easiest to start with a spoon then get in there with your hands.
- Tip half the mix into the tray and press down firmly and evenly. Place it in the fridge to start firming up while you prepare the next layer.
- Add a few drops of the pink food colouring to the remaining mix and combine very well so the colourng is evenly distributed. Remove the tray form the fridge and gently press the pink layer onto the white. Smooth the top
- Place in the fridge and chill until very firm. Cut into squares and enjoy
