Recipe Scene: Malteser Slice Mk ll

I’ve posted a recipe for Malteser slice before, but I was never entirely happy with the base, I found it didn’t really hold together properly. So now when I make it I use my favourite hedgehog recipe and replace the sultanas with Maltesers (well why wouldn’t you?). Although the other recipe is really nice, I think this works better. Make both and see what you think!

125 grams butter

125 grams sugar

1 egg, whisked

2 tablespoons cocoa

about 200 grams Maltesers – minus a handful you had to eat while cooking

250 grams plain sweet biscuits, crushed

200 grams cooking chocolate, melted

more Maltesers, roughly chopped

  1. Place the butter and sugar in a large saucepan and heat until the butter is melted and the sugar is dissolved. Remove form heat and stir through the cocoa and vanilla. Leave aside to cool further – the eggs will be added next and if you add them too soon they will scramble form the heat of the mix, yuck.
  2. When cooled, stir in the egg, mixing quickly and thoroughly. Add the Maltesers and mix to combine.
  3. Pour into a lined slice tin, press down well and smooth the top. Pour most of the melted chocolate onto the slice and scatter with the chopped Maltesers. Drizzle the remaining chocolate onto the Maltesers, this will help them stick to the slice and not roll off when you cut it later on.
  4. Refrigerate until completely set and cut into bars or squares.
